- One large eggplant
- 1 tbsp - Any flavor of Saratoga Garlic Aioli
- (Optional) Beef, pork, or poultry 1/3 cup diced
- Pierce and wrap one large eggplant in paper towel.
- Microwave on high for six minutes.
- Remove from microwave and cut in half, remove seeds, pulp and outer skin.
- Place eggplant in bowl (with optional ingredient).
- Add any flavor of our five flavored aiolis and mix.
