Easy Eggplant

Servings: 6


  • One large eggplant
  • 1 tbsp - Any flavor of Saratoga Garlic Aioli
  • (Optional) Beef, pork, or poultry  1/3 cup diced


  1. Pierce and wrap one large eggplant in paper towel.  
  2. Microwave on high for six minutes.  
  3. Remove from microwave and cut in half, remove seeds, pulp and outer skin.  
  4. Place eggplant in bowl (with optional ingredient).
  5. Add any flavor of our five flavored aiolis and mix.
