Saffron Aioli Potato Salad

Ingredients
- 1 Qt Redskin Potatoes
- 2 Tablespoons Saffron Aioli
- Kosher Salt And Pepper
- 6 Scallions, Chopped

Preparation
Boil Redskins whole if smaller; halved if large; till fork tender. Quarter in a large mixing bowl. Add salt and pepper to taste. Stir in half of the chopped scallions and let set 5 minutes. Stir in Saffron Aioli and mix with a large spatula. Extra aioli can be added if a moister salad is desired. Let set 20 minutes. Garnish with additional scallions and serve.
