Ingredients
- One large eggplant
- (Optional) Beef, pork or poultry 1/3 cup diced
- Flavored Aioli - 1 Tbsp
Preparation
Pierce and wrap one large eggplant in paper towel.
Microwave on high for six minutes. Remove from microwave and cut in half, remove seeds, pulp and outer skin. Place eggplant in bowl (with optional ingredient). Add any of our five flavored aiolis and mix.
Servings: serves six
Suggestions: Serve as side dish. Add other vegetables according to your taste.
